2025 harvest walnuts are now all gone - we hope to have more in from the new harvest this coming autumn. Deliciously buttery walnuts, grown at Red Hat Orchards in West Norfolk and hand harvested, sorted and packed by Mathew Warwick. These carefully dried and graded 2025 season walnuts will keep well in their nets till at least the end of January. |
The walnut trees at Red Orchards were planted in November 2001 with named walnut varieties from Britain, Europe and North America. Varieties grown include Axel, Lara, Buccaneer and Broadview.
This year's harvest is mainly of Broadview variety nuts but with some nuts of other varieties including a few of the distinctive red "Redhat" nuts bred by Mathew.
The trees and nuts are unsprayed. After gathering they're dried outside in the sun before being hand graded and packed.
Crack and remove shell, eat!
Store in a cool, dry place.

| Can there be a better way to start the day than with this wonderful Rye and Walnut Sourdough Granola? Closely related to wheat and barley, rye is highly nutritious and has a deep, distinctive flavour that works perfectly with walnuts. This is a great recipe for sourdough bakers looking to use up starter discard. |
This recipe is from Isabella Palmer, journalist and recipe developer living in North London, passionate about seasonality and sustainable eating. To find more recipe inspiration head over to her Instagram account.
Note: if you’re using discard from our Wakeyns Sourdough Starter, add a splash of water to it to create a starter the thickness of double cream.

Wonderful results and so easy with a soda bread recipe. Lovely colour, density and flavour.
I use 3 measures of Black Wheat and add to it 1 measure of Strong White Flour.
Sometimes I add mixed grain flour as well. Always a perfect product,
I am an impulsive cooker and have rarely soaked any pulses when I fancy them. The naked peas (essentially split peas) solve this problem. The pink ones stayed more whole than yellow split peas, a fact I love. The taste is similar to yellow peas with a hint of red lentil and a texture similar to chick peas. I haven't tried it for houmous yet, but it should work a treat.
Just started a mainly vegan diet and had not realised how many beans you can buy! No idea what to choose so just bought this bundle. Tried a couple of recipes so far from the site and really wonderful. Who knew beans were so versatile and tasty!
Interesting to see these cooking instructions. However, I would like to recommend YQ as a bread flour. After some five years of using various Hodmedod's wheats for my bread, this is one of the very best I have tried - I get loads of compliments from family and friends whenever I bake with this flour.
Just arrived - quickly - but really looking forward to trying them.
