Our blend of emmer and lentils makes an excellent pilau, but can also be used in salads, as a base for stews or as a delicious alternative to rice.

For quicker cooking soak the mix for 2 or 3 hours in double the volume of water to mix. Either rinse the soaked mix and cook in stock for 30 to 40 minutes or, for pilau, cook dry in a little oil for a few minutes before adding stock as required
Add soaked or cooked mix to stews. Try home-milling and adding to breads, savoury muffins & pastry.
Cooking times for dried pulses and mixes will be longer at higher altitudes and when cooking with hard water or older pulses.
Adding bicarbonate of soda during soaking and/or cooking will soften the pulses and reduce the cooking time.
Cooked Pilau Mix can be used immediately or frozen for later use.

Norfolk farmer Henry Raker harvested the first ever field-scale crop of British chickpeas in 2019. This year's crop was harvested in September and has now been cleaned and packed. After a tricky summer in the field it'd be fair to say that the 2021 harvest chickpeas don't look as perfect as their imported cousins, but they taste fantastic.

Wrinkled peas are mostly grown for freezing but if not harvested in time they go to waste. Not these ones!
Whole wrinkled peas are superb in stews and curries, with a distinctively sweet, grassy flavour.
We're still experimenting with ways of cooking these peas ourselves but they can be substituted in recipes for other whole peas, especially whole yellow or blue peas. We look forward to hearing how you've cooked them!

Tasty, versatile and easy to cook, split wrinkled peas don’t need to be soaked and add a sweet, grassy flavour to dips, soups, stews and salads. They make excellent dal too.

Fava Bean Chips cook just like Split Fava Beans, only a little faster as they're smaller pieces of bean. They cost less (cheap as chips?) than the larger Split Fava Beans but are just as tasty, versatile and easy to cook.
Use our Fava Bean Chips to make dal, falafel or hummus - or add a handful or more to soups, stews or curries. The beans get softer and softer the longer they're cooked.
