These fritters from Eden Owen-Jone were inspired by the North Indian lentil fritter Dahi Vada, traditionally served after being fried and soaked, in a smothering of spiced yogurt and topped with coriander and tamarind chutneys.
These bon bons have a moist savoury filling with a crunchy breaded exterior. The marrowfat peas are gently simmered until tender before being mixed with smoked tofu to create the filling. Eden has paired them with a burnt leek XO sauce which is deeply savoury, spicy, sweet and a little smokey. Together they make the perfect side dish or starter.

There are many variations of this simple soup, made and eaten primarily during Lent. Most use chicken stock, but Eden packs in plenty of rich and savoury notes into the dish while keeping it vegetarian.
Pajeon is a delicious Korean pancake made with spring onions. Eden's version is completely plant based (traditional Pajeon is sometimes made with eggs), uses 100% fava bean flour (instead of wheat or rice flour) and fava bean umami paste (as a substitute for soy bean paste), and was cooked in a 20cm non-stick frying pan.

Inspired by traditional Peruvian quinoa soups, this soup uses a version of Aji Amarillo paste made using ingredients easily found in the UK rather than the traditional yellow Amarillo chillies. The flavour of this soup is distinctively fruity, savoury and a little spicy.

Congee is a savoury rice porridge traditional in many East Asian cuisines. Here Eden had substituted pearled spelt to create a nutty, wholesome interpretation of congee. Topped with zingy pickled apple, sweet braised shallot and spicy chilli oil. This dish would make a comforting dinner or savoury breakfast.
Eden Owen-Jones' light, silky and creamy whipped tofu dip is topped with split fava beans crisped in the oven to add a lovely crunch. Serve with deliciously bitter red endive leaves or spoon it over grilled radicchio.
You can make 'tofu' with any pulse, not just the traditional soybeans. Eden's recipe for homemade flamingo pea tofu is a perfect balance of sweet, smoke and umami flavours, paired with earthy celeriac and cavolo nero.
