Henrietta Inman, formerly of Wakelyns Bakery and Heart Bakery, now produces very small batches of 100% wholemeal bread at the Hodmedod Bakehouse right next to our Millhouse and Bean Store in Suffolk. Henrietta's sustaining loaves have a complex nutty flavour and keep beautifully.
Henrietta Inman describes her work and the bread she bakes with wholemeal flour from agroecological farms:
Our wholegrain sourdough bread is made with a diversity of wholegrains, including the revolutionary YQ Wheat Flour milled from organic grain grown in Suffolk. Wholegrain flours contain all the goodness of flavour and nutrition from the whole grain of wheat. None of the grain goes to waste in the milling process. Sourdough, naturally leavened bread, is good for our guts and overall health. The fermentation process increases the nutrients available and creates very flavourful loaves, which we really hope you enjoy!
We love our tin loaf toasted in the morning with local Fen Farm Dairy butter and jam made with fruit from local farms or the Kayapo's roasted PI'Y Brazil nut butter with a good pinch of salt; it's great for sandwiches too and everything really. It keeps very well wrapped in the white paper it arrives in for at least 7 days. If it’s drying out, refresh it by dipping it in water and putting it back in the oven.
*Add the loaf to your basket and complete your order as usual. A small number loaves will be baked to order every week. Orders for Thursday dispatch must be received by 12 noon on the Monday.

This bread makes eating healthily and sustainably so easy! Utterly delicious, flavoursome loaves.
Beautiful bread - fresh, bursting with flavour, incredible ingredients, filling and so nourishing. I love the delicate flavour of the bread with both sweet and savoury toppings. I’m a regular as the order process and delivery are so reliable. Would highly recommend.

As a longtime fan of Hodmedod’s I’ve been waiting for this book to arrive and gift to friends and family. No longer will there be a bag of dried peas languishing at the back of the cupboard or any procrastinating over what to do with my fava beans. This book is stuffed with delicious-sounding recipes and beautiful photographs that I want to make and share with others. There are lots of comfort food ideas which is just what I crave in the colder months as well as lighter recipes; all of them full of flavour, fibre and protein. It’s an interesting, though-provoking read even if you don’t do much cooking and left me feeling joyful, inspired and thankful that the need for and appreciation of diversity is expressed and runs richly through this book.
Your book offers recipes inspired by cooking styles from around the world while using your diverse range of British ingredients. I would like to try the different flat breads made with rye, emmer, buckwheat and pea flour. This book contributes to helping people eat better and cook their own food with ingredients grown with care for the land. Thank you 🤩
This granola is delicious, especially with blueberries and banana and topped with yoghurt or coconut kefir. I’ll definitely be buying again :).
I used these to make humous for the first time. I swear it tastes almost exactly the same as when made with chickpeas and so much nicer than shop bought. Very smooth and takes on the garlic and lemon flavours beautifully. Will use for dips again in the future.
Extremely tasty rye flour with a sweet malty taste. Mixed half and half with white spelt flour, it gives a loaf with great depth of flavour and nice, springy texture. Makes great toast.
