Rachel Steeds of plant-based kitchen Greenhouse has created this wonderful vegan twist on the Middle Eastern classic Kibbeh. Typically made with bulgur wheat and meat, Rachel's version combines pulses, smoked quinoa, carrots and spices for a flavour-packed dish.
It's liberating to realise that culinary classics like falafel can be made not just with chickpeas or fava beans, but in fact with most legumes. After all, most traditional dishes have come from a place of necessity and availability, making use of what’s around but applying culinary wisdom that can be found in other parts of the world too. Here, Julius Fiedler of Baking Hermann, brings falafel to the UK with this recipe using British-grown split green peas.
This kale and quinoa salad, with satay-esque dressing, comes from Melissa of The Refill Barn in Radwinter, Essex. This salad is perfect for a quick and filling meal. Melissa served hers with some leftover pizza dough with olive oil, za'atar and some perello olives.

We've been growing lentils in the UK since 2015 and they're now a tasty, versatile staple of our range of British-grown wholefoods.
Another great recipe from Martin Hill. We've quite a collection of recipes for hummus and similar dips, using different pulses and spices, but we’ve never had a smoked hummus. Halen Mon’s smoked salt and smoked water combine with our superb British-grown chickpeas to give this moreish hummus a deep, comforting flavour.
These Fava Fries are quick and easy to make, with very few ingredients. Made with our flavorful and protein-packed Fava Bean Flour, they're gluten-free and vegan!
This hot cross bun loaf from Izy Hossack uses a blend of wholemeal wheat and rye flour to create a rich and wholesome dough, high in fibre, packed with flavour and with a deliciously light texture thanks to the tangzhong method. It's wonderful eaten fresh or cut into slices and toasted the next day.
Serving a salad with a warm “hummus” base makes all the flavours sing, and feels so much for comforting on colder days. The Carlin Pea hummus is also fabulous with a baked sweet potato and plenty of dark green steamed leaves.
Based on the Hungarian dish Chicken Paprikash, but with a veggie twist. Isabella has replaced the chicken with our Whole Flamingo Peas, to make a hearty meal, flavoured with sweet paprika.
