Ten Beans of Mexico Bundle

Rich, creamy, and mild, this best-seller is delicious without fuss. Essential for gourmet baked beans, but versatile enough for almost any cuisine. The Heirloom Bean Co sources these and a range of other Phaseolus beans from North American bean specialist Rancho Gordo, founded in the early 2000s by Steve Sando to preserve and promote traditional and rare bean varieties of the Americas. |
Yellow Eye is a beautiful and lovable bean. It’s at home in a warming winter supper and as a summer side, pairing equally with smoked ham or seasonal vegetables, often as a rich and delicious vegan soup. The cooked beans are soft and melt-in-your-mouth smooth. They are mild enough that they'll take on any of the flavours you use during cooking. Traditionally, Yellow Eyes have been the variety of choice for regional baked-bean aficionados. Team with molasses and salt pork for New England baked beans, or with mustard and leeks for the old-England original, first popularised in 18th-century Staffordshire. Either way, Yellow Eye’s russet-potato texture makes a perfect base.

Baked beans, soups, dips, casseroles, pot beans. Yellow Eyes cooked with the best celery, carrot, onion, and garlic from the farmers market, plus a little extra-virgin olive oil, will make anyone happy. A smoky ham joint would do very well for itself resting in a pot with Yellow Eyes. And of course, they are our top choice for baked beans and casseroles. We've found that the more you cook with Yellow Eyes, the more you love them.
Check beans for debris, and rinse thoroughly. In a large pot, sauté aromatic vegetables (onions, garlic, celery, carrot etc.) in olive oil. Add beans and enough water to cover by about 2 inches/5cm. Bring to a full boil for 10 to 15 minutes. Reduce heat to a gentle simmer, using a lid to help regulate the heat, and gently cook until done, 1 to 3 hours. Salt when beans start to soften. A pre-soak of 2 to 6 hours will lessen the cooking time.

My first time cooking with these beans. Made the Yellow Eye Bean Soup from the Rancho Gordo cookbook (p118). Didn’t quite follow the recipe as used the slow cooker to have the soup bubbling away slowly all day rather than cook on the stove top. Oh my goodness… what an absolute delight… will definitely be buying lots more… xx
These beautiful beans are absolutely delicious. I ate them straight from the pan with a bit of olive oil. After a few hours' soaking, they cooked in less than an hour. Highly recommended!

This book is truly a gem. The knowledge and wisdom contained within is inspirational. It deserves to be on nearly everyone's kitchen book-shelf. For the seasoned wholefood cook it can add further rich and often imaginative choices. For the less well-practised cook, it can educate, motivate and encourage. As we travel into colder months ahead, just opening the book and seeing the first recipe (Barley & Oat Gruel with Brown Butter Leeks) is enough to galvanise one into Autumn/Winter cooking action! So, simply thank you Hodmedod's.
Made a batch of traditional recipe hummus using these red fox carlin peas and couldn't have been more delighted. Much nicer than chick peas imo, tastier and with a good meaty texture.I wouldn't go back to chick peas (which seem to be getting harder to find from a trustworthy source) again, the carlin pea is my go-to now.
An amazing recipe book that highlights ancient beans and grains from the UK that can be used to make delicious food. The beautiful illustrations and design are a bonus!
What a beautiful, brilliant book of delicious recipes, from classics with a twist, to creatively playful culinary experiments, healthy eating has rarely felt so exciting and satisfying. Suffused throughout with the deep love of land and produce, earthy food culture and the most precious of convivialities the communing of dining together. The book is already a favourite in our household and will no doubt end up as one of those cookery books affectionately well thumbed and adorned with flamboyant spatterings of ingredients!
I pre ordered so got my copy early, bought as a Christmas present for my daughter. It really is a delight to read and look through, so much so to de-risk making the present one look “thumb’d” I’m ordering a second for ourselves. The recipe in this pic comes highly recommended.
