A handsome bean with a faint chocolate flavour and a deep, rustic texture profile Certified organic Jacob’s Cattle Beans harvested at Morningstar Farm, Vermont, USA. The Heirloom Bean Co sources these Phaseolus beans from Vermont Bean Crafters in New England, America. |
This bean boasts a distinct, almost biscuit‑like tenderness that softens evenly while keeping a gentle chew at the centre. Their flavour leans toward toasted cereal and faint cocoa husk, and though that mottling fades in the pot their character doesn’t — they bring a quiet richness to broths and a grounding warmth to vegetable dishes.
These Jacob’s Cattle beans are grown at Morningstar Farm in north-east Vermont - a family concern laid out on 400 acres of rich soil that has been cultivating organic crops since 2004. Beyond heirloom beans, Morningstar produces cold-pressed sunflower oil, as well as operating a stone flour mill that delivers whole wheat and sifted bread flours from a diverse rotation of grains.

JCBs, as nobody calls them, are exceptional in a New England-style chowder, where their texture mirrors the creaminess without turning mushy. A pot of these with leeks, smoked bacon and thyme becomes a full meal, and they’re brilliant in tomato‑forward stews where that grainy sweetness balances acidity. For something simpler, fold them warm into roasted carrots with dill and cider vinegar, or pair with mushrooms and barley for a woodsy, autumnal bowl.
Check beans for debris, and rinse thoroughly. In a large pot, sauté aromatic vegetables (onions, garlic, celery, carrot, etc.) in olive oil. Add beans and enough water to cover by about 2 inches/5cm. Bring to a full boil for 10 to 15 minutes. Reduce heat to a gentle simmer, using a lid to help regulate the heat, and gently cook until done, 1 to 3 hours. Salt when the beans start to soften. A pre-soak of 2 to 6 hours will lessen the cooking time.

As a longtime fan of Hodmedod’s I’ve been waiting for this book to arrive and gift to friends and family. No longer will there be a bag of dried peas languishing at the back of the cupboard or any procrastinating over what to do with my fava beans. This book is stuffed with delicious-sounding recipes and beautiful photographs that I want to make and share with others. There are lots of comfort food ideas which is just what I crave in the colder months as well as lighter recipes; all of them full of flavour, fibre and protein. It’s an interesting, though-provoking read even if you don’t do much cooking and left me feeling joyful, inspired and thankful that the need for and appreciation of diversity is expressed and runs richly through this book.
Your book offers recipes inspired by cooking styles from around the world while using your diverse range of British ingredients. I would like to try the different flat breads made with rye, emmer, buckwheat and pea flour. This book contributes to helping people eat better and cook their own food with ingredients grown with care for the land. Thank you 🤩
This granola is delicious, especially with blueberries and banana and topped with yoghurt or coconut kefir. I’ll definitely be buying again :).
I used these to make humous for the first time. I swear it tastes almost exactly the same as when made with chickpeas and so much nicer than shop bought. Very smooth and takes on the garlic and lemon flavours beautifully. Will use for dips again in the future.
Extremely tasty rye flour with a sweet malty taste. Mixed half and half with white spelt flour, it gives a loaf with great depth of flavour and nice, springy texture. Makes great toast.
