Lemon Poppy Seed Waffles

Delicious waffles made with nutty buckwheat flour, browned butter, lemon zest and poppy seeds.

You just have to browse Tereza's Instagram feed to see that she's the queen of waffles. For these she uses the classic flavour combination of lemon and poppy seed to create bright citrus waffles with a slight crunch.

Makes 2 waffles

Ingredients

  • 50g Buckwheat Flour
  • 30g Butter, melted in a small pan until brown
  • 1 tsp Coconut Sugar
  • ½ Lemon, zest
  • 1 tbsp Lemon Juice
  • 1 Egg
  • 20g Ricotta
  • 1 tsp Vanilla Extract
  • 50ml Water
  • 1 ½ tsp Toasted Poppy Seeds
  • Pinch of Baking Soda
  • Pinch of Baking Powder
  • Pinch of Salt

Method

  1. Start by making beautifully fragrant zesty sugar - put the sugar into a small bowl, add grated lemon zest and using a teaspoon, rub the zest into the sugar, so that the oils from the zest get released. This way you get the maximum flavour out of the zest and your waffles will be delicious.
  2. Mix the flour, baking soda, baking powder and toasted poppy seeds and salt in a small bowl.
  3. In a larger bowl, mix together the rest of the ingredients - egg, water, cooled brown butter, ricotta, vanilla extract, lemon juice and zesty sugar and stir well to combine.
  4. Now add the dry mix into the wet mix and mix it well, until it's combined. No need to overmix though.
  5. Spoon the batter into your greased waffle maker and wait until the waffles are golden brown. Serve with berries, Greek yoghurt and maple syrup
