Chia and Chocolate Protein Bites

The Cook & Him have created these indulgent but protein–packed bites to mark our launch of the first British chia, grown by Peter and Andrew Fairs at Great Tey in Essex. The tiny oil-rich seeds of Salvia hispanica were a staple food in Aztec cultures, alongside beans and corn, and are rich in protein, fibre and Omega-3 fatty acids. These protein bites are vegan and naturally gluten-free.

Chia and Chocolate Protein Bites

Serves 6-8


  • 2 tbsp Chia Seeds
  • 10 Medjool dates
  • 1 cup Cashew Nuts
  • 3 tbsp Goji Berries
  • 1 tbsp Raw Cacao Powder
  • 1 tbsp Hemp Protein Powder
  • ½ tsp Vanilla Extract
  • Grated zest of 1 Large Orange


  1. Remove the stones from the dates and put into a food processor with all the other ingredients
  2. Pulse for 1-2 minutes until the nuts are well chopped and the mixture has become quite sticky
  3. It will take a while to go from chopped and powdery to soft and sticky, just keep pulsing the mixture in the food processor until it starts to form together in clumps
  4. Using your hands, roll into balls and store in an airtight container in the fridge for up to 1 week

These are amazing, by far my favourite snacky style bar/balls I’ve ever had, either home made or bought! I adapted a wee bit and used almonds instead of cashews, and also added in some ground linseed/camelina seed mix. First batch I made didn’t last long, so made a bit more the second time but I just end up making larger balls rather than more :) They’re the sort of thing that are commonly available to buy in shops these days for anything around £2+, so it’s great to be able to make them. Consistency is perfect too.
