A variety of common bean, borlotti beans hold their shape when cooked and add a creamy depth to soups and stews or when blended for dips. You won't find better than these borlotti beans grown by Jérémy and Jonathan Desforges at the Ferme des 3 Rois in the Beauce region of central France. Or try all four varieties of our new organic beans from France and save over 20%! Growing any beans other than fava is very difficult to do in the UK. Over the years we've worked with small growers to offer occasional small quantities of different Phaseolus bean varieties. But they sell out immediately and we've left many bean lovers disappointed. We're excited to now be working with the Desforges brothers to bring some of their superb organic beans across the Channel, less of a journey than some of our Scottish organic fava have to travel! The Ferme des 3 Rois was converted by Jérémy and Jonathan to organic production and diverse cropping in 2020. |
These borlotti beans are a multi-purpose variety of Phaseolus vulgaris or common bean that can be harvested as a green pod to be eaten as a vegetable, as semi-dry beans for quick cooking and as dry storing beans. Across Europe borlotti are often grown as a "French" bean - eaten fresh, pod and all - and sometimes to be eaten semi-dry. The beans are at their most nutritious when fully dry.
Soak the beans for 6 hours. Cover with water or stock, bring to the boil and simmer for 30 to 40 minutes until the beans are soft. Add more water if needed.
Cooking times for dried pulses will be longer at higher altitudes and when cooking with hard water or older pulses. Cooked pulses can be used immediately or frozen for later use.

They are amazing ingredient of my home made tapas. I never soak pulses to not allow fermentation, but those beans slow cooked really well within around 2.5 hours. I will definitely buy them again!

Recommend this Medlar Jelly as it is excellent, the taste is delicious.
These are great but I do struggle with trying to toast them and then getting them to gel. Any tips from anyone would be gratefully appreciated. I dry toast them in a pan but they do stick a bit as I do not use non stick.
We love these Brazil nuts, not just their provenance which deserves a fabulous all by itself, but they are delicious!! Tasty and moist. Keep well in the freezer and we take out smallish amounts out and have a few every day. Eagerly awaiting next arrivals.
I haven't used these in any recipe yet, just pre-soaked and cooked with a teaspooon of miso. They are really delicious with a lovely soft texture, the skins don't interfere with the enjoyment. I think they would be good in so many recipes but if I don't stop picking at them I won't get to know this time round. It's brilliant to be able to try beans from other cultures and while these are more expensive than some, quite honestly by the time you've soaked and cooked beans you get so many from a packet they are always a bargain.
This blend is a winner! So nutritious and delicious! Easy to cook too. Beautiful !
