These crackers from Anna Warden are incredibly addictive and they naturally happen to be both vegan and gluten free. They're gorgeous alongside a whole myriad of dips, as well as great with cheese or just on their own.

Serves 4–6

Ingredients

100g Fava Bean Flour
50g Cornflour
50g Extra Virgin Olive Oil
1 tsp Flaky Sea Salt (plus extra to sprinkle)
150g Water
1 tsp Fennel Seeds
1 tsp Chilli Flakes
Freshly ground Black Pepper

Method

Pre-heat the oven to 140°C fan.
In a pestle and mortar, very roughly bash the fennel seeds and chilli flakes.
In a large bowl, add the fava bean flour, cornflour, extra virgin olive oil, salt and water. Mix very well with a whisk until the mixture is completely smooth.
Line two trays with baking parchment, divide the mixture between the two and spread as thinly as possible using a spatula or the back of a spoon.
Sprinkle with the bashed fennel seeds and chilli flakes, a very generous grind of black pepper and some more flaky sea salt.
Bake in the pre-heated oven for an hour until golden in colour and dry to touch. Allow to cool completely, then break up into large shards with your hands.
