This soup is so easy to make and tastes as creamy as if you’ve added a ton of dairy cream! It's all down to the hemp seeds that bring such a wonderful texture when cooked and blended.

This recipe was created by Emma Ellice Flint, an experienced chef and women’s health nutritionist. Emma explains that, "hemp seeds contain complete protein, anti-inflammatory oils and phytoestrogens, making them a smart choice in perimenopause and menopause."

1 generous serving

Ingredients

  • 1 Small Red Onion, peeled and chopped
  • 1 tbsp Extra Virgin Olive Oil
  • 150g Sweet Potato, chopped into small pieces
  • 70g Broccoli Florets
  • 30g Hulled Hemp Seeds
  • 1 tsp Turmeric Powder (optional)
  • 300ml Water
  • Salt and Pepper, to taste
  • Small handful chopped Fresh Herbs,eg parsley, basil, thyme
  • 40g Fresh Ricotta or Quark (optional)

Method

  1. On medium/low heat, into a saucepan, add the oil and onion. Put the lid on and gently cook for about 3-5 minutes until the onion is soft.
  2. Add broccoli, sweet potato, hemp seeds and turmeric (if using) to the pot, and enough water to cover the vegetables. The amount of water you add depends on how thick you like the final soup.
  3. Put the lid back on, turn the heat up to high, and bring to the boil. Once boiling, turn the heat down to low and continue to simmer until the potato is soft, about 10 minutes.
  4. Turn off the heat, and using a stick blender, carefully (watch out for hot liquid splashes) blend into a creamy soup.
  5. If you don’t have a stick blender, wait for the soup to cool a bit and then tip it into a blender/smoothie maker, for a lovely creamy finish. Alternatively for a chunkier version of this soup, once the sweet potato has cooked to soft, use a potato masher to mix the soup.
  6. Pour the soup into a bowl, check the seasoning, perhaps add some more salt and some pepper. Stir through the chopped herbs and dot with ricotta or quark.
