BBQ Lions Mane Mushroom Steaks

Our award-winning Fava Bean Umami Paste is similar to Japanese miso but made with British-grown fava beans. It's packed with deep rich umami flavour with subtle sherry notes and, like miso, it's perfect for marinades. Peter Grant has created a rich and flavoursome marinade for Lions Mane Mushrooms steaks.

Ingredients

250g Lions Mane Mushrooms
2 tbsp Fava Bean Umami Paste
2 tbsp Olive Oil
1 tsp Garlic Powder
1 tsp Smoked Paprika
Salt and Pepper, to taste

Method

Preheat the BBQ to medium-high heat.
Clean the lions mane mushroom by gently brushing off any dirt. Slice the mushroom into 1-inch thick steaks.
In a small bowl, mix together the fava bean umami paste, olive oil, garlic powder, smoked paprika, salt and pepper.
Place the mushroom steaks in a shallow dish and coat them with the marinade, making sure they are evenly coated.
Place the marinated mushroom steaks on the preheated BBQ grill and cook for about 3-4 minutes per side, or until they are tender and slightly charred.
Remove the mushroom steaks from the grill and let them rest for a few minutes before serving.
Enjoy the Lions Mane Mushroom steaks with a side salad or grilled vegetables.

This salad is great for a lighter addition to a Christmas smorgasbord, or as a way to use up leftover turkey (and sprouts) in the days after Christmas. Just shred the turkey and add into the salad at assembly stage. Also delicious in the lead up to Christmas with a bit of salmon, or marinated tofu.
