Our award-winning Fava Bean Umami Paste is similar to Japanese miso but made with British-grown fava beans. It's packed with deep rich umami flavour with subtle sherry notes and, like miso, it's perfect for marinades. Peter Grant has created a rich and flavoursome marinade for Lions Mane Mushrooms steaks.

Peter Grant is a vegan organic caterer, with a passion for seasonal and foraged foods.

Ingredients

  • 250g Lions Mane Mushrooms
  • 2 tbsp Fava Bean Umami Paste
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • Salt and Pepper, to taste

Method

  1. Preheat the BBQ to medium-high heat.
  2. Clean the lions mane mushroom by gently brushing off any dirt. Slice the mushroom into 1-inch thick steaks.
  3. In a small bowl, mix together the fava bean umami paste, olive oil, garlic powder, smoked paprika, salt and pepper.
  4. Place the mushroom steaks in a shallow dish and coat them with the marinade, making sure they are evenly coated.
  5. Place the marinated mushroom steaks on the preheated BBQ grill and cook for about 3-4 minutes per side, or until they are tender and slightly charred.
  6. Remove the mushroom steaks from the grill and let them rest for a few minutes before serving.
  7. Enjoy the Lions Mane Mushroom steaks with a side salad or grilled vegetables.
