Quick & Easy Quinoa Salad

This striking protein-rich black quinoa salad from Tereza is makes great use of our black quinoa. Its striking colour and complex flavour make it an excellent accompaniment to any dish.

Ingredients

  • 150g Black Quinoa, or a mix of red and black (pre-soaked in cold water)
  • 300ml Vegetable Stock
  • 1 Avocado
  • 2 Handfuls of Fresh Coriander
  • 40g Raisins, soaked for at least 20 mins in hot water
  • 3 tbsp Olive Oil
  • 1 Lemon, juiced
  • ½ tsp Smoked Salt
  • 30g Toasted Almonds
  • Oak Smoked Water (optional)

Method

  1. It's best to pre-soak the quinoa overnight or at least for a few hours to make it easier to digest and cook faster.
  2. When you're ready to start cooking, discard the quinoa water and rinse it well. Put in a small pan and simmer in veggie stock for about 25 minutes. Add more stock if you need to. You're looking for an al dente texture.
  3. In the meantime, cube the avocado, chop the coriander and toast the almonds.
  4. Combine the olive oil with lemon juice, add smoked salt and stir well to combine or ideally shake in a jar with a lid.
  5. When the quinoa has cooled down to room temperature, add the remaining ingredients and season to taste with more salt, pepper, and lemon or lime juice. You can also add some oak-smoked water for an extra smoky kick.

The malted wheat flour and coffee create a gorgeous depth of flavour and a moreish caramelly base which pairs perfectly with dark chocolate and sea salt. These cookies will keep in the freezer (unbaked) for a couple of weeks, and so are the perfect thing to have to hand for times you want a cookie or for when you might just need a cookie.
