These buttery crumble bars from Órfhlaith Noone are like little handheld tarts – perfect on a winter afternoon. Made with spelt flour and ground almonds, the crumb has a rich, nutty depth that pairs beautifully with sweet, spiced mincemeat. Simple to make and easy to slice, they’re ideal for Christmas baking, but just as lovely year-round with your favourite jam.

Makes: 9 bars

Ingredients

  • 100g Rolled Oats
  • 100g Spelt Flour
  • 65g Ground Almonds
  • 50g Brown Sugar
  • 1/2 tsp Baking Powder
  • 1/4 tsp Fine Sea Salt
  • 100g Salted Butter, cut into 1cm cubes
  • 275g Good Quality Mincemeat

Method

  1. Line a 20x20cm tin with parchment paper and preheat your oven to 180°C.
  2. Put all the ingredients except the mincemeat in a bowl and rub together using your fingertips. Keep going until you have a crumbly dough that sticks together when you pinch it.
  3. Press 2/3 of the mix into the base of your prepared tin. The bottom of a glass can help you achieve a smooth, even surface.
  4. Spread the mincemeat evenly over the base. Sprinkle with the remaining crumble and bake for 35-40 mins, until golden brown.
  5. Cool completely before slicing.
