Brazil Nuts Breakfast Camelina Chia Naked Oats oats Seeds

This simple and naturally sweet recipe is a delicious and nourishing alternative to traditional grain-based granola. Packed with crunch from brazil nuts, seeds, and flaked almonds, it’s full of healthy fats, fibre and plant protein - perfect for a sustaining breakfast or snack. The chia fruit compote adds a bright, jammy contrast, thickened naturally with chia seeds for extra texture and nutrition.

For this recipe, India has used a mix of frozen fruit from the freezer - plum, blueberries and raspberries. You can mix and match, depending on what’s on hand!

Ingredients

For the Compote:
  • 200g Frozen Fruit of Choice - berries, plums, apple
  • 1 tsp Vanilla Bean Paste or Extract
  • 1 tbsp Lemon Juice and Zest
  • 1 tbsp Chia Seeds
  • 1 tbsp Honey
  • 100ml Water
For the Granola
  • 50g Brazil Nuts, roughly chopped
  • 20g Flaked Almonds
  • 100g Oats
  • 20g Camelina Seeds
  • 15g Coconut Chips
  • 40ml Coconut Oil
  • 3 to 4 tbsp Honey (depending on desired sweetness)
  • 1 tbsp Ground Cinnamon
  • 1 tsp Vanilla Bean Paste or Extract
  • Pinch of Sea Salt

Method

  1. Place a small saucepan on the hob over a low heat, add the frozen berries, lemon juice, zest and honey.
  2. Allow the frozen fruit to soften and defrost, then add in the chia seeds and more water. Mix regularly and after 5 minutes it should have become nice and gelatinous and thickened.
  3. Preheat your oven to 170C
  4. For the granola, combine all your dry ingredients in a bowl, apart from the coconut chips and mix together.
  5. Pour in the oil, honey and mix well until everything is lightly coated. Transfer to a baking dish and spread into an even thin layer.
  6. Bake in the oven for around 15-20 minutes until the granola starts to golden and crisp up. Add in the coconut chips and return to the oven for another 5-10 minutes.
  7. Remove from the oven and leave to cool.
  8. To serve, spoon greek yoghurt into a bowl, top with the compote and granola. Sprinkle it with extra cinnamon!
