Green Pea Loaf

We just couldn't believe the rise on this loaf when we saw the photo on the The Vegan Chef School's beautiful Instagram feed. Vegan Chef Day Radley has created this simple but delicious gluten-free bread using our versatile and delicious wrinkled pea flour or green pea flour.

This recipe uses either of our green pea flours (milled from wrinkled peas or smooth green peas), but any of our pulse flours would substitute well and very the colour and flavour.

Serves 2

Ingredients

  • ½ tsp fresh yeast plus 1tsp warm water
  • ½ tsp salt
  • 100g Wrinkled Pea or Green Pea Flour
  • 50g potato starch
  • 10g fine psylium husk
  • 200ml warm water

Method

  1. Mix the yeast with the 1 tsp warm water until nicely dissolved
  2. Mix the salt, pea flour, potato starch and psylium together in a bowl until well combined
  3. Add the yeast mixture to the dry ingredients, then add the warm water, before mixing well to remove all lumps
  4. Put it into a mini loaf tin and leave to rise in a warm place for 1 hour
  5. Meanwhile, preheat the oven to 100 degrees celcius
  6. Put the loaf into the oven for around 30 minutes, until it has risen well.
  7. Turn up the oven temperature to 180 degrees, and bake for a further 20-30 minutes until is sounds hollow when you tap it.
