| Once popular with millers and bakers, Flanders is quite unlike any other British wheat, being soft but with good bread making qualities. |
Flanders is a winter-sown medium-straw wheat, grown in Britain in the 1970s and 80s but now almost extinct.
Our Flanders flour is stone-milled in small batches through our own stone mill at the Hodmedod Mill House in Suffolk, from Flanders variety wheat grown by Jeremy Dickin at Oak Farm in Lincolnshire.
Stoneground and wholemeal it retains its full nutrients and flavour and is ideal for baking, pastry and cakes.

Stoneground wholegrain Flanders variety wheat flour is an excellent soft but quality flour, perfect for biscuits and pastries, it can also be used for bread making, especially baguettes (after all it is of French ancestry).

We made two batches today one with 100% Flanders flour and the other with 2/3 Flanders to 1/3 White Spelt. We made large rolls (or cobs as we call them) and small loaves. The 100% Flanders was a little more rustic and very tasty. We feel the 2/3 to 1/3 makes a really good all purpose bread. We will be buying more!
a delicious well-flavoured flour, which give us the results we like for our bread making - and also great for pastry! We always try and get Flanders flour, and having tried some of the other flours here the family think this is the best, and are upset when it gets sold out!!
The taste is very good, but the greatest strength I’ve found is in handmade, yeasted bread.
I aim for a Cranks style heavier bread, with minimal kneading but a couple of hours fermenting as a batter.
Fermentation and gluten development are quicker than any other flour I’ve used.

Really great to have Hodmedod recipes in book form now, excited to delve into different recipes (starting with a ful medames), lots of exciting things to try and historical nuggets of information!
Great healthy and tasty bread collection. I keep them in the freezer and eat them over a month. I will keep ordering them
This book is truly a gem. The knowledge and wisdom contained within is inspirational. It deserves to be on nearly everyone's kitchen book-shelf. For the seasoned wholefood cook it can add further rich and often imaginative choices. For the less well-practised cook, it can educate, motivate and encourage. As we travel into colder months ahead, just opening the book and seeing the first recipe (Barley & Oat Gruel with Brown Butter Leeks) is enough to galvanise one into Autumn/Winter cooking action! So, simply thank you Hodmedod's.
Made a batch of traditional recipe hummus using these red fox carlin peas and couldn't have been more delighted. Much nicer than chick peas imo, tastier and with a good meaty texture.I wouldn't go back to chick peas (which seem to be getting harder to find from a trustworthy source) again, the carlin pea is my go-to now.
An amazing recipe book that highlights ancient beans and grains from the UK that can be used to make delicious food. The beautiful illustrations and design are a bonus!
