India's autumnal bircher muesli is topped with with caramelised apples, coconut yoghurt and crushed almonds. This recipe uses our organic Four Grain Muesli Base, a nutritious, nutty and malty cereal blend of four delicious grains, all from British farms - rolled and jumbo oats, malted wheat, rye and barley flakes.

Bircher muesli was created around 1900 by Swiss physician and nutritionist Maximilian Bircher-Benner as a wholesome meal for his patients. Inspired by a dish he encountered while hiking in the Swiss Alps, Bircher's original recipe combined raw oats, grated apples, nuts, lemon juice, and condensed milk. He believed in the health benefits of a diet rich in raw foods and fibre.

Serves 2

Ingredients

Bircher
  • 1 Large Apple, coarsely grated
  • 100g Four Grain Muesli Base, Organic
  • 1 Lemon
  • 320ml of Almond Milk (or as desired)
  • 1 tbsp Cinnamon (or as desired)
Caramelised Apples
  • 2 Apples
  • 2 tbsp of Honey
  • 1 ½ tbsp Coconut Oil or Butter
Toppings
  • 2 tbsp Desiccated Coconut
  • 100g Coconut or Dairy Yoghurt
  • 20g Almonds
  • A Few Sprigs of Mint

Method

  1. Start by making your bircher muesli. In a large bowl mix the grated apple, a squeeze of lemon, before stirring in the muesli base, cinnamon and milk. Cover and transfer to the fridge overnight.
  2. In the morning, give the mix a quick stir and add any extra milk if it seems a little thick.
  3. To make the caramelised apples, core the apples and cut them into equal wedges.
  4. Warm the coconut oil in a frying pan and add the apple slices. Cook over a medium heat for 10 minutes, turning often to make sure they don’t burn.
  5. Once they are soft, add in the honey and cook for another 5 minutes until sticky and caramelised.
  6. Transfer your bircher muesli to a serving bowl and top with the caramelised apples and a dollop of yoghurt. Finish with preferred toppings!
