These beans are firm and stay whole, but you can keep cooking them and they'll go from starchy to creamy. Despite their thick skin, they exude a beautiful bean broth that needs little help to be enjoyed. Scarlet Runners are one of the oldest cultivated foods in the Americas. The edible lipstick-coloured flowers are so pretty that some Californians grow Scarlet Runners for the blooms alone. In our book that’s a crying shame!

Pot beans, casseroles, salads, soups, chili. Scarlet Runners are versatile, but we like to serve them with lots of wild mushrooms and a load of roasted garlic for a meaty treat, vegetarian style! Being firm they hold their shape, and thus make a wonderful salad bean.
Check beans for debris, and rinse thoroughly. In a large pot, sauté aromatic vegetables (onions, garlic, celery, carrot etc.) in olive oil. Add beans and enough water to cover by about 2 inches/5cm. Bring to a full boil for 10 to 15 minutes. Reduce heat to a gentle simmer, using a lid to help regulate the heat, and gently cook until done, 1 to 3 hours. Salt when beans start to soften. A pre-soak of 2 to 6 hours will lessen the cooking time.

First thing I've cooked from my first order from hodmedods and wow, they're great.
Soaked them overnight and cooked them with carrot, onion, garlic and a couple of bits of the seaweed that came with my subscription. The beans are firm but creamy. The flavour is really rich and meaty and the broth from them is sensational. And they've kept their colour well and look stunning. So pleased.

Moist flavoursome and great mix of cereals. Nice texture with the oats.
I haven't cooked with this batch yet but it's fabulous that I can but BRITISH chickpeas. Thank you Hodmedod for being part of the bean and pulse revival!!

Just came back to order some more and thought I'd leave a review. These are really great and the simplicity and nutrition of them is a winner. I've only used them so far as 'cereal' with oat milk or as part of a muesli but they really are superb and I'm looking forward to trying them in some of the recipes here too (that fridge cake looks yum!)
The box arrived as expected and I happened to have all the ingredients for the black lentil and roasted tomato dish on the recipe card within. What a dish! These lentils are very special indeed. I'm glad I doubled the quantities and made enough for 2 days.
