Fava Fries

These Fava Fries are quick and easy to make, with very few ingredients. Made with our flavourful and protein-packed Fava Bean Flour, they're gluten-free and vegan!

Perfect for a light lunch or starter, this recipe was crafted by the talented Louisa Sugdan from the Elegantly Knackered Style blog and inspired by the innovative Siding Bakery, run by baker Polly Quick between 2019 and 2023 at Melton Constable in Norfolk.

Serves 4

Ingredients

  • 100g Fava Bean Flour
  • 1½ tsp Vegetable Oil
  • 500ml Boiling Water
  • Salt and Pepper, to taste

Method

  1. In a saucepan mix the fava bean flour with generous doses of salt and pepper to season (good seasoning is vital).
  2. Pour over the boiling water and oil and whisk until smooth.
  3. Cook over a low heat, stirring constantly, until the mixture starts to show an elastic texture. As soon as the mixture starts to change in texture, take it off the hob and keep stirring for about a minute
  4. Pour into a small baking tray and leave to set for around 30 minutes.
  5. Once set cut into 1cm slices, resembling chips.
  6. Preheat your oven to 180 °C/ gas mark 4.
  7. Place the 'fries' on a baking tray and cook for 20 mins, until they are slightly firm on the outside and soft in the centre.
  8. Serve with garlic mayonnaise, tomato ketchup or salt and vinegar.
