Radek's Brazil Nut Praline Bar is made with wild-harvested PI'Y Brazil Nuts from Indigenous Kayapó-led cooperative COOBA-Y. Radek's stone-grind the Brazil nuts for 72 hours with Zorzal cacao, coconut sugar, cocoa butter and a soft touch of lucuma powder. The result is a silky-smooth filling with earthy depth and a delicate natural sweetness. Once set and cut into squares, each piece is carefully hand-dipped into Radek's dark 80% Zorzal couverture. It’s a bold yet balanced chocolate that mirrors the richness of the land it comes from.
Zorzal is a rich, fruity cocoa bean that allows the deep flavours of the Brazil nut to thrive in this praline. Grown in and around the Reserva Zorzal, a nature reserve in the northern highlands of the Dominican Republic, this cacao supports a conservation model where agriculture and reforestation go hand-in-hand. Farmers work alongside ecologists to preserve biodiversity, protect endangered migratory birds, and restore native forests - all while producing some of the world’s most vibrant and flavour-rich cacao. This unique approach, blending agroforestry and scientific conservation, is part of what makes Zorzal cacao so special.
The Landworkers' Alliance, Roddick Foundation, Hodmedod and Kayapó-led cooperative COOBA-Y have come together to build a new direct trade relationship in solidarity with the Indigenous fight for survival, bringing wild-harvested nuts directly from the Kayapó people of Brazil to the UK for the first time.
By buying PI'Y - the Kayapó name for Brazil nuts - you’re strengthening the Kayapó people, their culture and the Amazon rainforest they protect and depend on. Trading the nuts provides financial autonomy for around 600 families in over 50 Kayapó villages and helps protect Indigenous lands - 40,000 square miles of rainforest.

When I'm hungry for lunch, or dinner, or just home-alone, and urgently want something that's nutritious, filling and tasty to eat, this is my go-to food. A tray of them in the larder is essential for daily use and for a survival store. It's a meal for one, or add a bit of water to make 2 bowls of soup. Add some creamed coconut or coconut oil to make it richer. Perfect!
Why wouldn't you want wonderfully tasting green pancakes? We also alternate green and yellow blinis for canapés. You can of course make them even greener with a couple of leaves of fresh spinach wizzed into the batter.
All the peas is a nice mix for sprouting for a tasty and healthy snack or addition to salads. Soak in water, drain when fully expanded, rinse twice daily, then sprinkle on salads or like me, just eat a mouthful each time you walk past.
