This extraordinary organic flour is milled from the new Blacksmith variety of wheat, traditionally bred by Owen Davies.
Stoneground and wholemeal it retains its colour when baked giving a fantastic chocolate colour to breads, pastry and cakes.
Our current batch of Blacksmith Wheat has been lab tested to have protein at 11.4% and a Hagberg reading at 300+.
Perfect for bread making and baking.

This unusual flour is something everyone should try. I use it in sourdough and yeasted bread, and it makes an unusually dense dough that is actually rather textured and nice to stretch and fold even when using at 50:50 with white. It has a very nice flavour with a long prove - and so far has never over-proved on me by going liquidy. Aside from its unusual flavour and appearance, I have achieved a good firm and edible crust that doesn't turn into nasty shards

I am an impulsive cooker and have rarely soaked any pulses when I fancy them. The naked peas (essentially split peas) solve this problem. The pink ones stayed more whole than yellow split peas, a fact I love. The taste is similar to yellow peas with a hint of red lentil and a texture similar to chick peas. I haven't tried it for houmous yet, but it should work a treat.
Just started a mainly vegan diet and had not realised how many beans you can buy! No idea what to choose so just bought this bundle. Tried a couple of recipes so far from the site and really wonderful. Who knew beans were so versatile and tasty!
Interesting to see these cooking instructions. However, I would like to recommend YQ as a bread flour. After some five years of using various Hodmedod's wheats for my bread, this is one of the very best I have tried - I get loads of compliments from family and friends whenever I bake with this flour.
Just arrived - quickly - but really looking forward to trying them.
