Giovanni Carleschi makes the best pasta we've eaten, using stoneground flour milled from carefully selected British-grown organic grains. The bronze die pasta is produced and dried at low temperatures to maintain the flavour and nutrition.

Carleschi's Spelt Conchiglie are made with stoneground wholegrain spelt so that none of the amazing nutritional and health benefits of this grain are lost in the milling process. Not to degenerate any of the vitamins, the pasta is produced and dried at low temperature.

These wholegrain conchiglie carry the subtle toasted almond, light brown walnut, toffee and caramel flavours of spelt grain. The same bouquet experienced when mixing spelt flour with water is recognised in the finished dry pasta as a sign that nothing is lost in the artisan process.
