Quinoa Salad with Avocado and Olives

A really simple quinoa salad that's quick to make and ready in 15 minutes.  It's delicious on its own or served as a side dish.

Makes 2 generous servings

Ingredients

  • 100g Quinoa (rinsed)
  • 250ml water
  • 1 Avocado
  • A handful of green olives
  • A bunch of coriander
  • 2 tablespoons or olive oil
  • 1/2 Lime

Method

  1. Put the quinoa in a pan with the water and bring to the boil. Turn down the heat to let it simmer for 15 minutes. When it's cooked cover with a cloth and leave to stand.
  2. Meanwhile chop up the avocado, olives and coriander. 
  3. Fluff up the quinoa with a fork and stir in the avocado, olives and coriander.
  4. Drizzle over the oil and a squeeze of lime and season with salt and pepper.

Tried it. Loved it. This quinoa is excellent. Found the cake recipe and dying to try it. Novel combining of ingredients.
