The grains can be soaked, cooked and eaten whole, and is well suited for milling at home (we recommend using a Mockmill) a makes a flavoursome flour.

Combined with Organic 600g Spelt grain, 300g Organic white and 300g Black wheat grain absolutely outstanding combination in producing 2 wonderful sourdough loaves
I milled the grains fresh and mixed 50:50 with (french) organic white T55 flour, fermented with both starter and fresh yeast ~24 hrs. This flour works extremely well in a bread dough, not sticky at all at 65% hydration, and the bread has a wonderful complex taste and character. Would love to see this organic!

I got the whole suite of beans a few months ago and so far these have been my favourite. Lovely and creamy. And rather cute to boot!
I've spent years looking for a worthwhile healthy alternative to rice both in Europe and Asia. All the time it was lurking in East Anglia at Hodmedods waiting to be discovered. It's now a cupboard staple. More flavour than commercial rice, more fibre, too. Emmer and lentils! Who knew! Great stuff!
