A variety of common bean with glossy crow black skin and creamy inside, black "turtle" beans hold their shape when cooked with a delicate texture and nutty flavour. You won't find better than these black beans grown by Jérémy and Jonathan Desforges at the Ferme des 3 Rois in the Beauce region of central France. Or try all four varieties of our new organic beans from France and save over 20%! Growing any beans other than fava is very difficult to do in the UK. Over the years we've worked with small growers to offer occasional small quantities of different Phaseolus bean varieties. But they sell out immediately and we've left many bean lovers disappointed. We're excited to now be working with the Desforges brothers to bring some of their superb organic beans across the Channel, less of a journey than some of our Scottish organic fava have to travel! The Ferme des 3 Rois was converted by Jérémy and Jonathan to organic production and diverse cropping in 2020. |
Black "turtle" beans are a variety of Phaseolus vulgaris or common bean that's very popular in the Americas, where the species originated. The beans are now popular around the world and known as karuppu kaaramani in Tamil, frijoles negros in Spanish and feijão preto in Portuguese.
Soak the beans for 6 hours. Cover with water or stock, bring to the boil and simmer for 30 to 40 minutes until the beans are soft. Add more water if needed. The cooking water will take on a dark black colour and is full of flavour - save it for stock, broths and soups.
Cooking times for dried pulses will be longer at higher altitudes and when cooking with hard water or older pulses. Cooked pulses can be used immediately or frozen for later use.

These black beans are incredibly creamy and full of flavour - easily the best dried black beans I’ve ever had. They cooked to perfection in just an hour, with not a single tough or undercooked bean in the pot. Unlike other brands I’ve tried, these French-grown beans from Hodmedod’s are clearly fresh, not something that’s been languishing in a warehouse for years. If this level of quality holds across the rest of the new Ferm des 3 Rois range, I’ll be a regular customer. If it remains consistent over time, I’ll keep coming back for more.

Slightly smaller than supermarket chickpeas. I've made two lots of the best hummus ever. Just upset I've got to wait until next year's harvest to get more. I hope they plant more this year.
This has become my go-to winter lunch. Soak for a few hours, slow cook a simple sofrito then chuck in the beans/grains and their soaking broth & season. Cook slowly, maybe with some potatoes, and hey presto! Hot lunch for a week, especially good with some spicy kimchi added. Keeps me warm for pennies.
I am not going to write more than just record that — they are utterly delicious — and have become a much welcomed, convenient and enjoyed addition to our diet.
Very disappointed that they are currently out of stock. We eagerly await their return!!!
