There are several things to consider when you want to mill with the Mockmill.
Use only cleaned grains. Unclean grain main contain small stones that can damage the milling stones.
Moist grain will lead to the buildup of a film on the milling mechanism. You can remove the film simply by milling dry grain on a course setting. If in doubt, press a kernel onto a hard surface with the back of a spoon: if it breaks with a lot crack, the grain is dry. Grain that is too damp for milling can be squashed flat and then looks like rolled oats. Rye should be stored for at least six months following harvesting before milling.
The Mockmill easily handles dried spices and seasoning including pepper, coriander and some more. Please note that some spices, such as cinnamon may need to be broken into pieces small enough to feed into Mockmill. To flush the mill of the aroma of milled spices, simply mill a small amount of grain (such as wheat or rice) right away. Then use this ‘’flavored flour’’ to add aroma to your baking or sauces!
Be careful when milling nuts or oily food such as sesame, flax or poppy seeds. Even coffee beans contain a great deal of oil, which leaves a film on the grinding stones, rendering them incapable of processing the grain properly without thorough cleaning. Try milling a blend of grains and nuts or seeds.

This is a fantastic device. I now no longer need to buy bread. The flavour of the bread is immensely superior with freshly ground grain. I purchased grain in bulk and make 2 or three loaves at one time and it actually works out cheaper than buying bread from the shops.
I have also used the device to make pasta with pea flour and soya flour.
I would recommend also getting a proofing device which is particularly helpful in the winter when it would be otherwise difficult too maintain sufficient temperature for the
dough to rise.
The device is very well made and straightforward to use.
Mockmill customer service is also very good and I had some advice from them about milling different things.

I often find fava beans a bit bitter (is it just me?!) so have previously just used them in quite heavily flavoured dishes. Not these ones though - no bitterness at all - just really tasty. I often eat them just with a bit of seasoning and drizzle of oil!
This unusual flour is something everyone should try. I use it in sourdough and yeasted bread, and it makes an unusually dense dough that is actually rather textured and nice to stretch and fold even when using at 50:50 with white. It has a very nice flavour with a long prove - and so far has never over-proved on me by going liquidy. Aside from its unusual flavour and appearance, I have achieved a good firm and edible crust that doesn't turn into nasty shards
I make fantastic tasty hummus with Carlin Peas . I cook up the whole pack, then freeze in very small batches., equivalent to a canful, and they defrost overnight. I sometimes add butter beans or flageolets and vary the flavour with all sorts,…paprika, sun-dried tomatoes, aubergine etc. Or I can add them frozen to meat or veg stews, stir fries etc. love them!!
Really like this dish, great flavour and some real substance to it!
Fantastic grain for making risotto's and stews creates a really great creamy texture during cooking without the addition of dairy (although the addition of dairy elevates everything!) They don't overcook unlike rice so its almost a foolproof alternative, the end results are a moreish bite to the cooked grain.
