A recipe booked published for the United Nations Food & Agriculture Organisation's International Year of Millets in 2023.

Millets, often referred to as “forgotten grains”, are a diverse group of small-seeded grasses that have been cultivated for thousands of years across different cultures and continents. Many varieties of millets, as whole grains, can be an important part of healthy diets – offering various nutrients including essential minerals, vitamins and dietary fibre. How they are prepared, however, is a critical consideration to maintain and enhance their nutritional value. The recipes in this book have been selected with nutrition in mind.

This recipe book is a legacy of the IYM 2023 and aims to raise awareness of the diversity of millets and to promote their consumption by sharing enticing recipes embracing different regions, tastes, cuisines, cooking skills and the versatility of millets. The recipes selected for this book were collected through the Global Chefs’ Challenge, which called on chefs and hobby cooks to explore cooking with millets and share photos and videos of their favourite millets-based dish.

Recipes include:

  • Millet tamal with spicy cherries and wild oregano
  • Roman-style millet and walnut gnocchi
  • Kodo millet risotto with barnyard millet crisp
  • Finger millet smoothie
  • Sorghum, orange and ginger cake

Published by the United Nations FAO, 2023.
