The Earsham Street Cafe’s version of pebernødder (or peppernuts), a traditional Danish spiced Christmas biscuit. Made with our organic YQ wheat flour and plenty of festive spices, these are very much a one off Christmas batch (until next year!). |
The tradition of eating small spiced biscuits is common all across Northern Europe, though not in the UK - which is a great pity because they’re absolutely delicious. It’s unclear where the recipe originated, but whether ‘pepernoten’ (Netherlands), ‘pfeffernuss’ (Germany) or peppernuts (USA), these crunchy little biscuits are closely associated with Christmas and are often the treat left for St Nicholas.
Our friends Gemma and Mike at the Earsham Street Cafe in Bungay have come up with a special peppernut recipe just for us, made with flour milled from organic YQ wheat grown in Suffolk. A richly spiced sweet treat, they’re too good to leave out for Father Christmas!
Biscuits keep best in an air-tight container stored in a cool place. Correctly stored these pebernødder should keep well for 4 weeks.
YQ Wheat Flour, Salted Butter, Caster Sugar, Cream, Spices (White Pepper, Cinnamon, Cardamom, Ginger, Cloves), Baking Powder.

PureOaty oat drink is made at Glebe Farm in Cambridgeshire from gluten-free oats grown and milled on the farm. Creamy and with a naturally mild sweetness it makes a great alternative to dairy milk. |
The Rayners have farmed at Glebe Farm for over 50 years. Since 2005 Rebecca, her brother Philip, and the team have worked to grow and produce a range of gluten-free oat products.
Pure Oaty contains just four ingredients with no added sugar or stabilisers, and is not made from oat syrup or concentrate. Every batch is tested to ensure that gluten is under 5 parts per million, lower than the regulatory level of 20ppm for gluten-free products.
Ready to drink. Great for coffee, tea and other hot drinks. Also ideal for drinking cold, adding to breakfast cereals, or even for making ice cream.
For barista style coffee, gently heat the oat drink, froth with a handheld milk whisk or automatic frother to form a thick foam. The volume of the frothed drink will increase about 2.5 times. Add to hot coffee and serve.
For best before date see top of pack. Store in a cool, dry place. Shake well before use. Once opened keep in fridge and use within 5 days.

The superb "Hodmedod" sourdough loaf is baked by Johnny Spillings at the Penny Bun Bakehouse in Lowestoft
The loaf is made with a blend of wholegrain YQ and white flour, a porridge of naked barley flakes and toasted wholegrain quinoa, all slow fermented with the Penny Bun sourdough starter. Once formed the loaves are coated with naked barley flakes and baked. The mild 'sour' flavour of the ferment is complemented by the sweet maltiness of the naked barley, nutty depth of the YQ and the rich, earthy, tang of toasted quinoa.
Sourdough loaves keep well (you'll have a good few days to eat your loaf after delivery) and freeze brilliantly.
*Add the loaf to your basket and complete your order as usual. Up to 50 loaves will be baked to order every Wednesday and Thursday. Orders for Wednesday baking must be received by 3pm on the Monday. Orders for Thursday baking must be received by 3pm on the Tuesday
