A purée of fermented beans full of rich umami flavour.
Similar to a Japanese miso but made with British-grown fava beans, our fermented Fava Bean Umami Paste is packed with deep rich umami flavour with subtle notes of sherry.

Adds to stirfries, stews, soups, dressings, stocks and more for umami depth and fruity, sherry flavour. We’ve even been spreading it on toast!
Add about half a teaspoon per serving to almost any dish for added depth of flavour.
Store unopened in a cool, dry place. Keep refrigerated after opening and use by best before date.

Our Fava Umami Paste is fermented in the same way as many soya bean ferments used for miso, black beans, soy sauce or tamari, but using fava beans instead of soy beans. It's made with just fava beans, water and salt, fermented with a live culture of Lactobacillus delbrueckii, Aspergillus sojae and Zygosaccharomyces rouxii.
Suitable for vegans.

RealVeg work a few alleys between the fruit trees near the farmhouse at Wakelyns. The CSA structure they use means their customers take a simple share of the harvest, to share the risks and the rewards of growing. They also help on the land, planting, weeding, harvesting. Not customers in the usual sense - it’s a brilliant way of doing things.
This year and last year RealVeg set aside a bit of ground to grow garlic. In the spirit of the CSA model we've agreed to share the risk - whatever they grow, we’ll buy. They grew A LOT, but it turns out lots of people wanted delicious garlic (some even made it up to Small Food Bakery in Nottingham), so the ‘risk’ wasn’t such a risk after all - it was more a promise that enabled something brilliant to happen.

Grown primarily as a botanical for distillers, this British-grown coriander seed is of exceptional quality with a high oil content and superb citrus aroma.
The seeds make a delicate but flavoursome seasoning for curries, dal, soups and other dishes. For maximum flavour gently toast the seeds in a dry pan before using whole, crushed or freshly ground.

Most commonly pressed for oil, these beautiful dark seeds of the rape or canola plant (Brassica napus subsp. napus) are also delicious as whole seeds and have a distinctive mustardy sweetness.
They're excellent for baking, as a topping or incorporated into doughs and pastry. Try adding to dressings or sprinkling toasted seeds over salad.
