Try Vicky's recipe for Braised Fennel with Whole Fava Beans.
Included in the book are helpful sections about buying, storing, and soaking legumes, as well as information about the different varieties and growing your own beans. About half of the recipes are vegetarian, while the rest use meat or fish, often quite frugally and more as flavouring for the legumes/pulses which are the backbone of the dish. If you don’t already love cooking with beans, peas and lentils, you will realise just how versatile and tasty these healthy ingredients are with Out of the Pod.
60 easy-to-make, nutritious recipes for beans, lentils and other pulses that are as wholesome as they are delicious.

Britain's original bean, the fava bean is delicious, nutritious and good for the soil. Our Organic Whole Fava Beans are perfect for spicy Egyptian ful medames, truly British baked beans, stews, curries, salads and more.
Our current crop of whole fava beans are the unusually small, round and wonderfully tender Maris Bead variety, bred over 50 years ago at the Plant Breeding Institute on Maris Lane near Cambridge. Whether they're cooked from dry or used canned, we think these are our best ever whole fava.
